Ingredients

  • 1 mini cucumber, grated
  • 1 tsp Za’atar blend
  • ½ cup Greek yogurt
  • ½ lemon, juiced
  • 2 Tbsp chopped fresh parsley
  • Pinch or 2 of salt to taste

Instructions

  1. On the large holes of a box grater, grate cucumber into a colander and let sit for 15 minutes.
  2. Squeeze out excess water using your hands. You want to do this so the tzatziki is not too watery.
  3. Add cucumber to a bowl along with all of the other ingredient and mix until well combined.
  4. Serve in a bowl with a sprig of fresh parsley on top.
