Ingredients
- 1 cup honey (clover or wildflower works well)
- 1 Tbsp apple cider vinegar
- 1 Tbsp Citrus Chili Spice Blend

Combine and Heat
- Mix: In a small saucepan over medium-low heat, combine the honey, apple cider vinegar, and Citrus Chili Spice Blend.
- Infuse: Stir the mixture constantly for about 3–5 minutes. You want the honey to become thin and very warm to the touch, but do not let it reach a rolling boil, as this can scorch the honey and change its flavor.
- Meld: Once tiny bubbles start to form at the edges and the spices are fragrant, remove the pan from the heat.
Cool and Store
- Steep: Let the honey sit in the pan for 5–10 minutes to allow the spices to fully infuse.
- Bottle: Pour the warm honey into a clean glass jar. Note: You do not need to strain it; the Citrus Chili bits add great texture and continued flavor.
- Store: Store at room temperature in a sealed container. Because of the vinegar and spices, it will keep for several months.
Notes
If the honey crystallizes over time, simply place the jar in a bowl of warm water for a few minutes to return it to a liquid state.
