A healthy, high-protein meal that’s elegant enough for guests but simple enough for a weeknight. The savory rotisserie spices perfectly complement the buttery salmon and the charred, tender broccolini.

Ingredients

  • 1 lb salmon fillet, skinless and boneless, cut into 3 fillets
  • 1 ½ Tbsp Rotisserie Spice Blend
  • ½ lb broccolini (trimmed)
  • 3 tsp olive oil (divided)
  • Lemon wedges (for garnish)

Instructions

Prep and Season

  1. Preheat: Preheat your oven to 400°. Line a large baking sheet with aluminum foil.
  2. Season the Salmon: Pat the salmon fillets dry with a paper towel. Rub each fillet with 1 tsp of olive oil, then coat the tops and sides generously with the Rotisserie Spice Blend, pressing the spices in so they adhere.
  3. Season the Broccolini: On the other side of the baking sheet (or in a small bowl), toss the broccolini with the remaining 2 tsp of olive oil. Spread them out in a single layer.

Roast

  1. Arrange: Ensure the salmon and broccolini have enough space between them on the tray to allow for even roasting and "charring" rather than steaming.
  2. Bake: Roast for 12 to 15 minutes. Note: The salmon is done when it flakes easily with a fork and the broccolini stems are tender with crispy, charred tops.
  3. Finish: Remove from the oven and immediately squeeze a little fresh lemon juice over the salmon and broccolini to brighten the flavors.

Serve

  1. Plating: Serve one salmon fillet with a generous portion of broccolini. Garnish with an extra lemon wedge on the side.

Notes

If your broccolini stalks are particularly thick, slice them in half lengthwise before tossing in oil to ensure they cook at the same rate as the salmon
