Ingredients
- 2 lbs skin on bone in chicken thighs
- 1 small acorn squash
- 3 Tbsp Za’atar blend
- ¼ cup olive oil
- lemon wedges for garnish
Instructions
- Preheat oven to 400°F
- Pour olive oil and Za’atar Blend in a large bowl and mix to combine.
- Cut acorn squash in half and remove seeds, cut each half in half again.
- Add acorn squash and chicken thighs to the bowl and with your hands rub in Za’atar Blend to evenly coat chicken and squash.
- Place chicken, skin side up, and squash, skin side down, in a single layer on the sheet pan.
- Place in the oven and cook until the internal temperature of the chicken reaches 165°F, approx. 40 minutes.
- Remove from the oven and let cool for 10 minutes.
- Serve with lemon wedges.
