Ingredients

  • 2 lbs skin on bone in chicken thighs
  • 1 small acorn squash
  • 3 Tbsp Za’atar blend
  • ¼ cup olive oil
  • lemon wedges for garnish

Instructions

  1. Preheat oven to 400°F
  2. Pour olive oil and Za’atar Blend in a large bowl and mix to combine.
  3. Cut acorn squash in half and remove seeds, cut each half in half again.
  4. Add acorn squash and chicken thighs to the bowl and with your hands rub in Za’atar Blend to evenly coat chicken and squash.
  5. Place chicken, skin side up, and squash, skin side down, in a single layer on the sheet pan.
  6. Place in the oven and cook until the internal temperature of the chicken reaches 165°F, approx. 40 minutes.
  7. Remove from the oven and let cool for 10 minutes.
  8. Serve with lemon wedges.
