Ingredients
- 12 oz red new potatoes
- 1 Tbsp salt
- 2 Tbsp red, green onion or shallots, minced
- ⅓ c mayonnaise
- 1 Tbsp Ranch seasoning
- 2 tsp pickle relish
- ¼ cup cooked bacon, crumbled (optional)
- Fresh ground black pepper to taste
- 1 Tbsp apple cider vinegar (optional, see notes*)
Instructions
- In a pot, add red potatoes, salt and enough water to cover the potatoes by 1”. Boil potatoes for approx 15-20 minutes - insert a toothpick into a potato after 15 minutes to check and see if they are done. If not, continue to cook until the toothpick can pierce the potato without any resistance. Remove from the heat once they are done and pour out the water. Let potatoes cool until they are at room temp.
- In the meantime, in a large bowl mix the remaining ingredients together to combine. Once the potatoes are cool, cut them into ¼” pieces and add to the bowl with the other ingredients. Cover and refrigerate until ready to serve.
Notes
If you like your potato salad with a bit of a tang, add the 1 Tbsp apple cider vinegar
