The Pumpkin Spice Blend pairs wonderfully with old-fashioned oats, pecans, and walnuts in this hearty autumn granola
Ingredients
For the Granola Base:
- 4 cups old-fashioned rolled oats
- ¾ cup walnut pieces
- ¾ cup pecan pieces
- ¾ tsp Pumpkin Spice Blend
- ¾ tsp salt
Wet Ingredients:
- ½ cup melted coconut oil
- ½ cup maple syrup
- 1 tsp vanilla extract
For the Dried Fruit:
- ½ cup raisins
- ½ cup dried cherries or cranberries
Instructions
Mix & Combine
- Preheat & Prep: Preheat your oven to 350°F (175°C). Line a large rimmed baking sheet with parchment paper.
- Combine Dry Ingredients: In a large bowl, stir together the 4 cups rolled oats, ¾ cup walnut pieces, ¾ cup pecan pieces, ¾ tsp Pumpkin Spice Blend, and ¾ tsp salt.
- Add Wet Ingredients: Pour the ½ cup melted coconut oil, ½ cup maple syrup, and 1 tsp vanilla extract directly into the bowl with the dry ingredients. Stir thoroughly until every oat and nut is evenly coated.
Bake & Cool
- Spread & Bake: Spread the granola mixture onto the prepared baking sheet in an even layer. Bake at 350°F for 24 minutes, gently stirring halfway through (around the 12-minute mark), until golden-brown and fragrant.
- Cool for Clusters: Remove from the oven and press the granola down firmly with the back of a spatula. Let it cool completely on the pan without disturbing it (about 30–45 minutes) so crunchy clusters form as it sets.
Mix Fruit & Store
- Fold in Fruit: Once the granola is fully cooled, break it into clusters and gently fold in the ½ cup raisins and ½ cup dried cherries or cranberries.
- Store: Transfer to an airtight glass container or jar. Store at room temperature for up to 3–4 weeks.
