Ingredients
- 1 ½ cups all purpose flour
- ½ tsp salt
- 1 tsp baking soda
- 1 ½ Tbsp Pumpkin Spice Spice Blend
- 1 stick butter, melted
- ½ cup brown sugar
- ½ cup molasses
- 2 eggs
- 3 Tbsp milk
- 3 large, very ripe bananas (about 1 cup)
Instructions
Prep & Preheat
- Preheat & Prepare Pan: Preheat your oven to 350° F (175° C). Grease and flour a standard loaf pan (approx. 9 x 5 inches), or line it with parchment paper.
- Mash Bananas: In a small bowl, mash the 3 large, very ripe bananas until they reach about 1 cup of mashed fruit. Set aside.
Mix Wet and Dry Ingredients
- Whisk Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, salt, baking soda, and Pumpkin Spice Spice Blend. Set aside.
- Combine Wet Ingredients: In a separate, medium bowl, whisk together the melted butter, brown sugar, molasses, eggs, and milk until well combined. Stir in the mashed bananas.
- Combine: Pour the wet banana mixture into the dry ingredients. Gently fold the ingredients together using a spatula until just combined. Do not over mix; a few streaks of flour are acceptable.
Bake & Cool
- Bake: Pour the batter into the prepared loaf pan and smooth the top. Bake for 50 to 60 minutes, or until a wooden skewer inserted into the center comes out clean or with moist crumbs attached.
- Cool: Let the bread cool in the pan on a wire rack for 10 minutes. Then, carefully turn the loaf out onto the wire rack to cool completely before slicing.
