Ingredients

  • 1 ½ cups all purpose flour
  • ½ tsp salt
  • 1 tsp baking soda
  • 1 ½ Tbsp Pumpkin Spice Spice Blend
  • 1 stick butter, melted
  • ½ cup brown sugar
  • ½ cup molasses
  • 2 eggs
  • 3 Tbsp milk
  • 3 large, very ripe bananas (about 1 cup)

Instructions

Prep & Preheat

  1. Preheat & Prepare Pan: Preheat your oven to 350° F (175° C). Grease and flour a standard loaf pan (approx. 9 x 5 inches), or line it with parchment paper.
  2. Mash Bananas: In a small bowl, mash the 3 large, very ripe bananas until they reach about 1 cup of mashed fruit. Set aside.

Mix Wet and Dry Ingredients

  1. Whisk Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, salt, baking soda, and Pumpkin Spice Spice Blend. Set aside.
  2. Combine Wet Ingredients: In a separate, medium bowl, whisk together the melted butter, brown sugar, molasses, eggs, and milk until well combined. Stir in the mashed bananas.
  3. Combine: Pour the wet banana mixture into the dry ingredients. Gently fold the ingredients together using a spatula until just combined. Do not over mix; a few streaks of flour are acceptable.

Bake & Cool

  1. Bake: Pour the batter into the prepared loaf pan and smooth the top. Bake for 50 to 60 minutes, or until a wooden skewer inserted into the center comes out clean or with moist crumbs attached.
  2. Cool: Let the bread cool in the pan on a wire rack for 10 minutes. Then, carefully turn the loaf out onto the wire rack to cool completely before slicing.
