  • 2 Tbsp baking powder (not baking soda)
  • 1 tsp black pepper
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • ½ tsp salt

  • 2 Tbsp Lemon Pepper Spice Blend
  • ¼ c melted butter, unsalted
  • 2 tsp lemon juice
  • ½ tsp lemon zest

Prep and Bake the Wings

  1. Prep Oven & Pan: Preheat your oven to 450°F (230°C). Line a large rimmed baking sheet with aluminum foil, then place a wire cooling rack on top of the foil-lined sheet (this allows air circulation for crispier skin).
  2. Dry Wings: Pat the chicken wings thoroughly dry with paper towels—this step is crucial for crispiness.
  3. Create the Rub: In a large bowl, whisk together the baking powder, black pepper, onion powder, garlic powder, and salt.
  4. Coat Wings: Add the dry wings to the bowl and toss them until they are completely and evenly coated in the baking powder mixture. Arrange the wings in a single layer on the prepared wire rack.
