Ingredients
For the chicken burger
- 1 lb ground chicken
- 2 Tbsp chopped white onions
- 1 garlic clove, minced
- 1 Tbsp chopped fresh cilantro
- 1/4 c panko bread crumbs
- 1 Tbsp Guacamole Seasoning
For the avocado salad
- ½ c chopped tomatoes
- 1 Tbsp chopped fresh cilantro
- ½ c chopped apple
- 1 Tbsp chopped white onion
- 1 avocado, pitted, peeled and chopped
- Juice of ½ a lime
- 2 Tbsp roasted pumpkin seeds
- 1 tsp Guacamole Seasoning
Instructions
Prepare the Guacamole Chicken Burgers
- Combine Burger Ingredients: In a medium bowl, gently combine the ground chicken, chopped onion, minced garlic, chopped fresh cilantro, panko and 1 Tbsp Guacamole Seasoning. Mix until just combined, being careful not to over mix, which can lead to tough burgers.
- Form Patties: Divide the mixture into 4 equal portions and shape them into patties, about ¾ to 1-inch thick. Create a small indentation in the center of each patty with your thumb to prevent them from bulging while cooking.
- Cook the Burgers (Choose your method): Grilling: Preheat your grill to medium-high heat. Lightly oil the grill grates. Place the patties on the hot grill and cook for 5-7 minutes per side, or until an internal temperature of 165°F (74°C) is reached and no pink remains. Pan-Frying: Heat 1-2 teaspoons of olive oil in a large skillet or cast-iron pan over medium heat. Once hot, carefully place the patties in the pan. Cook for 5-7 minutes per side, or until an internal temperature of 165°F (74°C) is reached and no pink remains.
- Rest Burgers: Once cooked, remove the burgers from the heat, cover with foil and let them rest for 5 minutes. This helps the juices redistribute, keeping them moist.
Prepare the Avocado Salad
- Combine Salad Ingredients: While the burgers are cooking or resting, in a medium bowl, combine the chopped tomatoes, chopped fresh cilantro, chopped Fuji apple, chopped onion, chopped avocado, and roasted pumpkin seeds.
- Dress the Salad: Drizzle the juice of ½ a lime over the salad ingredients. Sprinkle with 1 tsp Guacamole Seasoning.
- Toss: Gently toss the salad to combine all ingredients and coat them evenly with the dressing and spices.
Assemble and Serve
- Serve the cooked Guacamole Chicken Burgers on buns (if using) with your desired toppings.
- For a bun-less option, use the Avocado Salad as a base on a plate and place the chicken burger on top.
