For the chicken burger

  • 1 lb ground chicken
  • 2 Tbsp chopped white onions
  • 1 garlic clove, minced
  • 1 Tbsp chopped fresh cilantro
  • 1/4 c panko bread crumbs
  • 1 Tbsp Guacamole Seasoning

For the avocado salad

  • ½ c chopped tomatoes
  • 1 Tbsp chopped fresh cilantro
  • ½ c chopped apple
  • 1 Tbsp chopped white onion
  • 1 avocado, pitted, peeled and chopped
  • Juice of ½ a lime
  • 2 Tbsp roasted pumpkin seeds
  • 1 tsp Guacamole Seasoning

Instructions

Prepare the Guacamole Chicken Burgers

  1. Combine Burger Ingredients: In a medium bowl, gently combine the ground chicken, chopped onion, minced garlic, chopped fresh cilantro, panko and 1 Tbsp Guacamole Seasoning. Mix until just combined, being careful not to over mix, which can lead to tough burgers.
  2. Form Patties: Divide the mixture into 4 equal portions and shape them into patties, about ¾ to 1-inch thick. Create a small indentation in the center of each patty with your thumb to prevent them from bulging while cooking.
  3. Cook the Burgers (Choose your method): Grilling: Preheat your grill to medium-high heat. Lightly oil the grill grates. Place the patties on the hot grill and cook for 5-7 minutes per side, or until an internal temperature of 165°F (74°C) is reached and no pink remains. Pan-Frying: Heat 1-2 teaspoons of olive oil in a large skillet or cast-iron pan over medium heat. Once hot, carefully place the patties in the pan. Cook for 5-7 minutes per side, or until an internal temperature of 165°F (74°C) is reached and no pink remains.
  4. Rest Burgers: Once cooked, remove the burgers from the heat, cover with foil and let them rest for 5 minutes. This helps the juices redistribute, keeping them moist.

Prepare the Avocado Salad

  1. Combine Salad Ingredients: While the burgers are cooking or resting, in a medium bowl, combine the chopped tomatoes, chopped fresh cilantro, chopped Fuji apple, chopped onion, chopped avocado, and roasted pumpkin seeds.
  2. Dress the Salad: Drizzle the juice of ½ a lime over the salad ingredients. Sprinkle with 1 tsp Guacamole Seasoning.
  3. Toss: Gently toss the salad to combine all ingredients and coat them evenly with the dressing and spices.

Assemble and Serve

  1. Serve the cooked Guacamole Chicken Burgers on buns (if using) with your desired toppings.
  2. For a bun-less option, use the Avocado Salad as a base on a plate and place the chicken burger on top.
  3. The fresh Avocado Salad can also be served as a vibrant and flavorful side.
