Ingredients

  • 4 ears of corn, husk removed
  • Pam or other cooking spray
  • 1 stick of salted butter, room temperature
  • 2 Tbsp Citrus Chili blend
  • 2 Tbsp chopped fresh cilantro, plus extra for garnish
  • ¼ cup crumbled Cotija cheese, plus extra for garnish
  • 1 jalapeno, seeded and minced (optional)

Instructions

  1. In a bowl, mix the butter, Citrus Chili blend, cilantro and cheese until fully incorporated. Cover and set aside.
  2. Heat gas grill on high setting. Spray the ears of corn with a thin layer of cooking spray. Place on the preheated grill and cook, turning every few minutes until each ear has a slight char in places (about 15 minutes).
  3. Remove from the grill and place on a plate. Spread the butter mixture over the warm corn, turning to coat evenly. Top with additional cilantro and crumbled cheese. If you like your corn extra spicy, top with the fresh jalapeno.
