Ingredients

  • 1.5 lbs chicken breasts or thighs – skinless & boneless
  • 1 cup Greek yogurt
  • 2 Tbsp extra virgin olive oil
  • 2 Tbsp Shawarma blend + more for dusting before grilling
  • 2 tsp tomato paste
  • 1 lemon, sliced
  • 1 package lavash bread or pitas
  • 1 small Persian cucumber sliced thin
  • 1 medium tomato sliced or diced (whichever you prefer)
  • 1 package hummus of your choice
  • ½ cup red onion, sliced thin
  • Fresh cilantro or parsley and lemon wedges for garnish

Instructions

  1. Cut the chicken into 1” cubes.
  2. Mix the yogurt, extra virgin olive oil, Shawarma blend, tomato paste and lemon slices together in a bowl.
  3. Add chicken and mix to make sure all of the chicken pieces are coated in the yogurt mixture.
  4. Marinate for at least 4 hours but overnight will produce the most tender and flavorful results.
  5. Skewer chicken onto metal or wood skewers (if using wooden/bamboo skewers make sure you soak them in water for about 15 mins before using to prevent burning). Sprinkle a little more shawarma seasoning onto the chicken. Just a light dusting is fine.
  6. Grill on medium high heat turning every few minutes until the chicken is cooked to 165°F internal temperature, approximately 10-12 minutes.
  7. Garnish with fresh chopped cilantro or parsley and lemon wedges.
  8. Place hummus, tomato, cucumber and red onion on the bread. Add grilled chicken and top with herbs and fresh squeezed lemon.
