A bright, herb-forward dish that feels like Spring on a plate. The lemon juice cuts through the richness of the salmon, while the Green Goddess Seasoning brings a savory, garden-fresh depth to the roasted broccolini.
Ingredients
- 1 lb boneless & skinless salmon (cut into 3 fillets)
- ½ lb broccolini (trimmed)
- 1 Tbsp Green Goddess Seasoning Blend
- Juice of ½ a lemon
- 3 tsp olive oil (separated: 2 tsp for the pan, 1 tsp for the veg)
- ¼ tsp each salt and pepper
Instructions
Prep the Pan & Fish
- Oil the Base: Preheat your oven to 400°F. Drizzle 2 tsp of olive oil onto the bottom of a rimmed baking sheet (or a large oven-safe skillet) and spread it out to create a non-stick surface.
- The Marinade: In a small bowl, whisk together the 1 Tbsp Green Goddess Seasoning Blend and the juice of ½ a lemon until it forms a loose paste.
- Position & Pour: Place the three salmon fillets onto the oiled pan. Pour the Green Goddess mixture evenly over the top of each fillet, spreading it to cover the entire surface.
Prep the Broccolini & the Roasting
- Season: Arrange the broccolini on the other side of the baking sheet.
- Coat: Drizzle the remaining 1 tsp of olive oil over the broccolini and sprinkle with the salt and pepper. Toss them directly on the pan to ensure they are lightly coated.
- Bake: Slide the pan into the oven and roast for 12–15 minutes.
- Check: The salmon is done when it's opaque and flakes easily with a fork; the broccolini should be bright green with slightly charred, crispy tips.
Serve
- Plate: Serve the salmon alongside the roasted broccolini.
- Finish: If there are any juices left on the pan (citrus and herb oil), spoon them back over the fish before serving!
Notes
By mixing the seasoning with the lemon juice first, you're essentially "rehydrating" the herbs in the blend, which helps them release their full aroma and flavor during the short roasting time.
