Ingredients

  • 2 thick slices of sourdough bread
  • ½ of an avocado, peeled and pitted
  • 2 eggs
  • 2 tsp of Dukkah or Za’atar
  • 1 tsp of your preferred fresh herb (cilantro, parsley, basil or chives)
  • Splash of your favorite hot sauce - optional

Instructions

  1. Crack eggs into 2 separate small bowls.
  2. Toast sourdough bread to desired brown-ness.
  3. Mash avocado in a small bowl and spread evenly onto the 2 pieces of toast.
  4. Sprinkle ½ tsp of Dukkah or Za’atar over avocado.
  5. Heat a small non-stick frying pan on medium high heat.
  6. Add a small amount of oil or butter to the pan. Fry 1 egg how you like it.
  7. Place the fried egg on top of 1 piece of toast and sprinkle with ½ tsp Dukkah or Za’atar onto the egg. Add fresh herbs and hot sauce if using.
  8. Repeat for the 2nd egg.
