Ingredients
- 2 thick slices of sourdough bread
- ½ of an avocado, peeled and pitted
- 2 eggs
- 2 tsp of Dukkah or Za’atar
- 1 tsp of your preferred fresh herb (cilantro, parsley, basil or chives)
- Splash of your favorite hot sauce - optional
Instructions
- Crack eggs into 2 separate small bowls.
- Toast sourdough bread to desired brown-ness.
- Mash avocado in a small bowl and spread evenly onto the 2 pieces of toast.
- Sprinkle ½ tsp of Dukkah or Za’atar over avocado.
- Heat a small non-stick frying pan on medium high heat.
- Add a small amount of oil or butter to the pan. Fry 1 egg how you like it.
- Place the fried egg on top of 1 piece of toast and sprinkle with ½ tsp Dukkah or Za’atar onto the egg. Add fresh herbs and hot sauce if using.
- Repeat for the 2nd egg.
